Tea Cake with Tea Glaze

This is literally a Tea Cake, as I have flavoured it with tea itself! For all the Chai lovers out there, this one is for you!! The recipe is of the basic vanilla cake recipe. I have added tea prepared wholly in milk and added to cake to give it it’s chai flavour. The cake is absolutely soft and moist.

The Tea Glaze on the cake makes it even better. It’s a normal sugar glaze, only I have added concentrated tea to the icing sugar. If you want to, you can run it through a sieve, although I didn’t do that, instead I crushed the tea leaves into the glaze to make the flavour more pronounced.

So here’s how to make this cake.

Ingredients for Tea Cake

  • 110 grams Soft Butter
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 tsp Lime Juice or White Vinegar
  • 1.5 cups All purpose Flour
  • 1/2 tbsp Baking Powder
  • A pinch of Salt
  • 1 tsp Vanilla Extract
  • 3/4 cup Milk
  • 1 tbsp Tea Leaves of your choice

Ingredients for Tea Glaze

  • 1 cup Icing Sugar
  • 1/4 cup Water
  • 1 tbsp Tea Leaves

 

Preparation for Tea Cake

  1. Heat milk and tea leaves together, bring to a boil until a nice tea colour is obtained
  2. Turn off the heat and let it cool for 3-4 minutes
  3. Add lime juice or vinegar to he tea and set aside
  4. Whisk butter and sugar in a bowl till light and fluffy
  5. Add eggs one at a time, whisking nicely after every addition
  6. Add vanilla extract and mix briefly
  7. In a separate, dry bowl, put the flour, baking powder and salt
  8. Sift this dry mixture into the egg batter, 1/3 at a time
  9. After sifting 1/3 of the dry ingredients, add 1/2 of the tea prepared, fold to incorporate
  10. Add the next 1/3, then rest of the tea prepared and again fold to incorporate
  11. Add the last batch of dry ingredients and fold till there are no dry streaks in the batter
  12. Pour the batter in a loaf pan, greased and dusted with flour
  13. Tap the pan lightly on counter to let any or excess air bubbles out
  14. Bake this in a preheated oven@180 C for 40-45 min or until golden brown from the top and when a skewer inserted into the centre comes out clean
  15. Once completely baked, remove from the oven
  16. Let it cool in the pan for 10 minutes and then run a knife around the edges of the pan
  17. Invert the pan on a cooling rack and let the cake cool completely

 

Preparation of Tea Glaze

  1. Sift the icing sugar into a bowl
  2. Boil water and tea leaves for a minute
  3. Let cool for 5 minutes
  4. Add a tsp of tea prepared into the icing sugar and mix
  5. Keep adding a tsp into the sugar and mix after every addition
  6. Add till you get a thick flowing glaze consistency
  7. If you want you can the tea prepared through a sieve or if not, just mix it into the sugar, crushing the tea leaves into the icing sugar
  8. Pour the glaze over the top of the cooled cake and serve!
