Ragi and Amaranth Walnut Cake is the exact cake you need to be eating right now because that’s the hottest trending cake of the season!! All fitness frenzy celebs are into this one these days!

When Fructus Terra gifted me their Ragi and Amaranth Flour, i couldn’t think of a better opportunity to make this hottest cake of the season! And oh boy, what an amazing cake!! I made it free from refined sugar, flour even butter!! And yet it was so easy to put together!! The aroma when the cake bakes is very earthy and warm (cozy enough for cold evenings and mornings) and the taste is even more amazing than the aroma!! It’s warm and earthy flavours are just what you need in this weather!! So thanks so much Fructus Terra! Without you, it wouldn’t have been possible!!
I also topped this cake with an ever so easy cinnamon cream cheese frosting that really gives a kick to this already amazing cake!

Ingredients for Ragi and Amaranth Walnut Cake

• 1 cup Ragi and Amaranth Flour
• ½ cup whole wheat flour
• A pinch of salt
• ½ tbsp baking powder
• ¾ cup buttermilk
• ¾ cup olive oil
• 2 eggs
• ¾ cup powdered Jaggery
• 1 tsp vanilla extract
• ¾ cup roughly chopped walnuts
• ¼ cup raisins

Ingredients for Cinnamon Cream Cheese Frosting

• ¼ cup softened cream cheese
• ¼ cup heavy whipping cream
• ½ tap cinnamon powdered

Procedure For the Cake

1. In a dry bowl, sift together the Ragi and Amaranth Flour, along with whole wheat flour, salt and baking powder
2. From this mixture, scoop out 2 tbsp, and put in a bowl along with walnuts and raisins
3. Toss the walnuts and raisins in the flour so as to coat them completely and set aside
4. In a separate bowl, whisk together the eggs along with the powdered Jaggery for 2 mins
5. Add buttermilk and oil and whisk again till combined
6. Now add the sifted dry ingredients into the wet ingredients, one third at a time, folding gently after each addition
7. After all the flour is in the batter, add in the walnuts and raisins and fold till they are evenly distributed in the batter and there are no dry streaks visible
8. Pour the batter into a cake pan, greased with oil and lined with parchment paper, dusted with flour too
9. Bake the cake in a preheated oven@180C for about 35-40 mins or until a toothpick inserted into the centre comes out clean
10. Once baked, remove it the oven, let cool on the counter for 5 minutes before unmoulding it
11. Let it cool completely on a wire rack

Procedure for Cinnamon Cream Cheese Frosting

1. Take all the ingredients in a bowl and whisk in a an ice bath till you get soft peaks


• On the cake serving dish, put the cooled cake
• Using a spoon, put dollops of frosting at the centre of the cake
• Use the back of the spoon the spread it to the edges
• You can swoop the spoon from the back side, back and forth to create pattern with the frosting
• Decorate with walnuts around the edges of cake
The cake is ready to serve!
