Strawberry Oatmeal Bars
These Strawberry and Oatmeal Bars have the goodness of fresh strawberries with a hint of lime, deep flavour from whole wheat flour and chewyness of oatmeal! Do you need any more convincing??
Most of the recipes we come across are made with refined flour. But here I have added whole wheat flour, which really brings out the earthy flavour! I have also used brown sugar which give these bars an amazing nutty flavour which we all love!
For the perfect chewy texture it is recommended to use Rolled or Old Fashioned Oats (click here to buy) , if not available you can use regular quick oats even though the chewiness will get a bit compromised!

Ingredients
For Oatmeal Base and Top
- 3/4 cup cold cubed butter
- 1.5 cups whole wheat flour
- 1.5 cups oats
- 1 cup packed brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- Zestof 1 lime
For Strawberry filling
- 250 grams Strawberries finely chopped
- 1/3 cup castor sugar
- Juice of 1 small lime
- 4-5 tbsp cornflour
Preparation
For Oatmeal Base and Top
- Put all ingredients except butter in a bowl and give it a dry mix
- Add butter and incorporate it in the and mix by rubbing the butter and flour in between the fingers till the mixture kind of looks like wet sand, you can use fork or dough scraper for the same
- Set aside
For Strawberry Filling
Put all the ingredients in a bowl and toss till evenly combined
Assembling
- In a baking tray lined with parchment paper, put 2/3 of the oatmeal mix, and pat gently with hands to firmly form its base
- Add Strawberry filling making as evenly as possible
- Put the rest 1/3 of the aotmeal mix and press it gently using hands
- Bake in a preheated oven@170c for 40-45 mins or until golden and the strawberries burst and get all juicy and jammy
- Let cool completely before cutting serving!
