Strawberry Pudding Trifle

Strawberry Pudding Trifle is one the easiest delicious desserts to make. If you have been following me for sometime now, you must know about the Instant Pudding Mix that I discovered from the great treasures of internet. It is actually by Laura Vitale, one of my favourite cooks of all time! I have used this pudding mix in numerous ways and it works like a miracle every single time!

About the pudding mix first. It is one of easiest things to make. You can make a big batch and just add milk and vanilla extract and have an excellent pudding ready in no time. Store it in an airtight container and it can go on in your pantry for months (That is if it makes it) ! There are tens and hundreds of ways of modify this pudding, while you make the pudding.

Coming back to the trifle, the trifle has 3 layers of the strawberry pudding, easy homemade strawberry compote and crushed digestive biscuits. All three things are super easy to make and you would be surprised how easy it is to come up with a stunning looking dessert with least amount of efforts.

So without further ado here’s how to make both – the mix and the trifle!

Ingredients for Strawberry Compote

  • 2 cups of washed strawberries, chopped into small chunks
  • 1/2 cup or more sugar (depending on how sweet the strawberries are)
  • Zest and juice of 1 small lime/lemon


Ingredients for Strawberry Pudding

  • 3/4 cup Instant Pudding Mix (see footnote)
  • 1 1/2 cups whole milk
  • 1/2 cup of Strawberry Compote prepared above
  • 1/2 tsp vanilla extract



Other ingredients

  • 1 cup crushed digestive biscuits



Preparation of Strawberry Compote

  1. Take all the ingredients in a heavy bottom sauce pan
  2. Start cooking on a low heat, stirring in every couple of minutes
  3. Once the compote has simmered for a couple of minutes, the strawberries will begin to break down and become jam like
  4. Once the strawberries are all thick and jammy, take it off the heat and set aside


Preparation of Strawberry Pudding

  1. In a heavy bottom saucepan, take the instant mix and milk
  2. Put the pan on heat and let it cool on medium on low flame stirring constantly
  3. Once it begins to simmer and it will start thickening very fast
  4. Once it thickens to a thick paste like consistency (will hardly take a minute to get there) turn off the heat and stir in the vanilla extract and Strawberry Compote
  5. Mix till all combined. You can more or less of the compote depending on how pink you want the pudding to be
  6. Cover with cling wrap and let it cool for 10 minutes


  1. In small dessert glasses, start by putting 1-2 tbsp of crushed digestive biscuits, then take a generous scoop of pudding and put it over the biscuit layer
  2. Using a small spoon spread the pudding evenly in the glass
  3. Now put about a tbsp of compote on the pudding
  4. Repeat the layers until the glasses are full
  5. End the compote, and using a toothpick, make some swirls
  6. Refrigerate until it’s time serve!
